There’s nothing better than spending the day in the kitchen on a cold and rainy Sunday. I rarely have time to think about three meals a day during the week so I always make sure there’s a good supply of pre-pared salads, snacks and lunches that I can grab on the go and take to the office. I need them to be healthy and wholesome so I’m not forced to grab something naughty from a supermarket.
This week I made Madeleine Shaw’s delicious Thai Coconut Prawn Soup. The ingredients were everything I had in the fridge and cupboards already so it barely cost me anything to make. From prep to bowl in less than fifteen minutes, it’s the perfect recipe to make in a hurry or when you get in from a long day and need a warming comfort fix.
